Jesse Griffiths, the locavore wild-man chef of Dai Due in Austin, has a knack for hunting out (literally) beautiful and delicious beasts in the wild. He recently authored Afield: A Chef’s Guide to Preparing and Cooking Wild Game and Fish, which is everything the title would have you believe and more. It perfectly captures Griffiths love of the wild, the respect and reverence he holds for the animals he hunts and butchers, and his love of down home cooking. The video above was made by Dark Rye, Whole Foods’ now apparently defunct culinary magazine, and it is a beautiful view into the mind and hunting practices of an extraordinary man.
